Fresh paneer is milk, lemon, and forty minutes

And it makes store-bought taste like an apology. The whole technique, start to finish — 2L of whole milk becomes about 350g of paneer. That's two dinners.

    Split the milk

    Bring 2L whole milk to a gentle boil. Off the heat, stir in 3–4 tbsp lemon juice a spoon at a time until the curds separate from clear green-ish whey. If it won't split, a little more lemon.

    Drain and rinse

    Pour through a muslin-lined sieve. Rinse the curds under cold water for a few seconds — this washes out the lemon so your paneer doesn't taste sour.

    Press it

    Twist the muslin into a tight bundle, set it on a plate, and put a heavy pot on top. 30 minutes for soft crumbly paneer, 2 hours for firm slicing paneer.

    The sear

    Cube it, pat it dry, and sear in hot ghee until one face is deep golden. Searing one side keeps it crisp outside, cloud inside. Straight into warm salted water if you're not using it immediately.
